I’ll admit, I was a little surprised to see Missouri take the top honors, along with Washington, for interest in Veganuary. That’s because of Missouri is known for anything, it’s the top-notch barbecue you can find in Kansas City, St. Louis and everywhere inbetween.
A Missouri Staple, Vegan-Style
Going vegan does not mean only eating salads. In recent years, there have been a number of innovations opening new food items for those who don’t eat meat or use other animal-based ingredients.
That even includes ribs! While that is an oxymoron, there are recipes online that allow you to make a barbecue staple that – no bones about it – will be a hit with friends and family when you get together to watch Kansas City Chiefs playoff games later this month.
One such recipe is available at VeggieSociety.com which uses seitan, a protein-rich food made with gluten from wheat, and jackfruit to replace the meat. For those looking for a gluten-free, there’s a recipe at RabbitandWolves.com that uses tofu.
